Sugar Snap Pea
& Shrimp Salad

Tired of a boring bed of lettuce for your base in a salad? Why not change it up a bit and try some delicious Sugar Snap Peas instead! And if you love shrimp then you will especially love this recipe. Chef Bill perfectly pairs these two simple ingredients into a sweet and savory salad, perfect for a summer meal! Oh, did I mention that sugar snap peas are incredibly healthy for you too? Sugar Snap Peas hold all the important vitamins and nutrients that are good for your heart and bones, so go ahead and help yourself to seconds and savor each bite!

1 1/2 lb. fresh Sugar Snap Peas
1/2 C Extra Virgin Olive Oil
1 half Roasted Red Bell Pepper
Balsamic Glaze (purchase @ Fresh and Easy)
Feta Cheese
1 lb. 21-25 Shrimp (cooked)
1tsp. Salt
1 pinch White Pepper

Blanch Sugar Snap Peas in boiling water for 2-3 min. Then chill in ice bath, drain and set aside.
Blend roasted bell pepper, salt, pepper and olive oil in a blender until smooth then pour into a squeeze bottle for easy drizzling.
Assemble a bed of snap peas, layer six shrimp per plate, drizzle bell pepper puree and balsamic glaze over peas and shrimp then top with feta cheese. Enjoy!

Alternate Recipe: Substitute chicken and asparagus for shrimp and peas.
