Three Bean
Sirloin Steak Chili

4 lbs Sirloin
1 Onion
4 Garlic Cloves
2 Pasilla Chiles
2 Dried California Chiles
1 Red Bell pepper
2 10 oz Can Diced Tomatoes
2 15 oz Can Black Beans
1 29 oz Can Pinto Beans
1 30 oz Can Peruano Beans
1 6 oz Can Tomato Paste
1 Tbsp Chile Powder
1 Tbsp Salt
1 Tbsp Cumin
4 Tbsp Olive Oil

Cooking Directions

Coarsely Chop: onions, garlic, pasilla, chiles, bell pepper &
California chiles. Saute in 2 T. olive oil until softened (about 10
minutes). Cut sirloin into 3/4 inch cubes and saute in 2 Tbsp. olive oil.
Drain beans (reserve juice) and set aside. Pureé peppers, onions and
garlic in a blender with reserved bean juice. (leave a little chunky)
Add together sirloin, beans, tomato paste, diced tomatoes and seasonings
and simmer 30-45 minutes. Serve hot.
