"Gourmet Garden"
Creamy Potato Salad

In this issue, I took my taste buds back in time to the “Gourmet Garden Restaurant” days when Chef Bill Hassett would prepare his famous creamy potato salad for his loyal patrons. The potato salad was absolutely delicious, with some even ordering the side dish as their main meal.

As you crank up your grill this summer, don’t forget to prepare this tasty side dish that will compliment any BBQ meal

INGREDIENTS:

4 lbs. Russet Potatoes
Cook, peeled and sliced
1 Lrg Bunch Green Onions
Sliced thin
1/2 Bunch flat leaf parsley
Finely chopped
2 Cups Sour Cream
2 Cups Light Mayonnaise
2 tsp Salt
1/2 tsp White Pepper

 

INSTRUCTIONS
Put all ingredients in a large bowl. Mix completely and refrigerate for at least six hours or overnight. Garnish and serve.

*Low fat alternative. Substitute fat free or light sour cream for the sour cream and mayonnaise.
